Around here...

Talk about a blog hiatus!! Life's been busy but I'm trying to catch up.  Here's what we've been up to....
 Penny got her first pedicure
It's hot again so we've been to more than one splash pad, luckily this was the only time he wasn't in a bathing suit
We've kicked back in our backyard
Our previous play pool got a crack and when we went to replace it, we bought this instead, completely on an impulse and haven't regretted it at all!! Best $90 ever spent and it's only been a few weeks.
The next generation of Murphy's already being trained : )

Frank proved that he actually has been paying attention with the flash cards we've been doing, when he made a J out of blocks and said J for Jillian without any guidance from me at all. I was overjoyed!!

I made a few things I saw on Pinterest, that turned out really cute
 My tomatoes got bigger!!

and Penelope's love affair with yogurt began, ha!
Hope all is well!!! XOXO -Amber

Spring Break

In random order, pictures from the best spring break yet.

This is what photographing a 3 year old boy in a cockpit on an aircraft carrier looks like , it was the stillest he was the entire time!
Lots of dinners out, delicious ones : )

Mammie's Cooking Part 2

We've been busy making more of Mammie's recipes, all of which have been tasty : ) Like I previously said, they are mostly desserts so we have several sweets and one entree. The lemon bisque was a surprise for me. I've always been under the impression that you can't make jello with pineapple because it won't set, but the lemon bisque proved me wrong. Not only does it have pineapple, it also has pineapple juice. I guess the caveat is that you can't use fresh pineapple. The recipe didn't state what size pan to line and I'm glad I didn't go with my first thought of a pie pan because it would have been much too small, the 9x13 was just big enough.
Overall, this was simple and tasty. I don't know that it would be something I would make all the time though, just because it makes so much.
Our one entree, the McLeod Special, was incredibly easy!! It also made a HUGE volume of food using just some really basic ingredients. It's kind of like a homemade hamburger helper only much better and you can easily make it a bit healthier.

The "Delicious Dessert" (yes I've been laughing about that name all week) is really quite delicious. I never would have thought to do anything like it, but I will definitely make this again. So easy and a very unique flavor. Just chop/smash everything and mash it all together into a very stiff dough, roll it in wax paper and pop it in the fridge. Easy peasy!

The last recipe was fudge cake. We actually made this first because all of the ingredients are so common we happened to have all of them. The cake is good but it didn't turn out at all like I would have thought. My guess was that it would be a dense, super moist cake/fudge like consistency. It turned out really light and fluffy and had a great flavor but maybe just a little plain. I think I'm going to try this again and put a caramel icing on top to kick it up a bit.

We'll be back with more soon. XOXO -Amber
